This restaurant located within the MGM Grand (inside where all restaurants are) is a Four Diamond Restaurant. Top notch in terms of decor, service, food as well as prices. We just had to try this Chinese restaurant to gauge whether it really is top notch or not. The cuisine is mainly Cantonese with an influence from Shanghai and a hint of Western flavor in certain dishes. Notice the hours of Operations. All the Four Diamond awarded restaurants are open for dinner only. Reservations are suggested but not necessary. When we went, it was not very packed.

After entering, you’ll see beautiful modern decor that blends in with the MGM Casino and plenty of comfortable seating, even for groups. There are booths available so if preferable, ask for that, its more romantic. The lighting is low as with most of the restaurants but creates a nice relaxing atmosphere.

The menu is a good selection of Cantonese styled food that includes Shark Fin Soup. There’s also some family style groups that gives you a taste of appetizers and several dishes. We ordered the Pearl’s Select Menu II with two appetizer dishes and four main course. Be sure to try the good selection of Tea available, a trolley will come over by the side of your table in order to brew the tea you want. If you’re unsure what to drink, ask for a recommendation (we prefer Jasmine).

The appetizer consists of Barbecued Pork, Roast Duck, Soya Chicken Platter (or as we normally call it, Soy/sauce Chicken), and the Asian Mushroom Spring Roll. It was served all on one platter. Everything tasted great. The mushroom spring roll was very crispy but simply delectable. Both the chicken and the duck had soft and tasty skins with very tender, juicy meat, very good quality. The barbecued pork was tasty as well, not burned at all and very well marinated.

The Lobster was cooked just right, perfectly tender and yet crunchy. The snow peas tasted very fresh and crisp. To top it off, the XO chili sauce added a spiciness that was not overpowering at all. An excellent dish.

The Mandarin Style Spare Ribs is boneless, marinated in sauce (hence the Mandarin Style). This sweet and a bit sour sauce is similar to that of Sweet and Sour Chicken. The sauce glazed the ribs perfectly giving it a lot of flavor when you bite into each sliced piece.

The string beans is stir fried exactly like how a good restaurant would. The difference is the quality of the string beans here is top notch and beautifully presented. It was just very fresh and even crispy when bitten into.

Even though its just Fried Rice, it is a delicious dish. The beef stir fried into is very soft an tender, not overcooked, and gives the rice a really nice flavor along with the bits of scallion.

The authenticity of the food was superb. Dishes are exact if not similar are served in Cantonese styled restaurants. You won’t be disappointed with the food. Everything is top notch, especially the ingredients. That is what really sets apart the regular restaurants and this high end restaurant, fresh quality ingredients.

The total comes out to about $60/person generally before drinks and gratuity. They have a good selection of wine as with all Four Diamond Restaurants. The taste menu would be the choice unless there’s several dishes you prefer from the regular menu.
