White Chocolate Macadamia Cookies

White chocolate macadamia cookies are one of my ALL-TIME favorite cookies!  I’ve never made it before because I always thought baking was always a hassle, and in many ways it  still is.   Yes laziness and lack of motivation gives birth to utter nothingness, but this time I found my calling.  What is this you may ask?  Well,  I’ve always wanted to create something with my hands, and since I have no skills for anything else like for crafts, I thought I might as well give it a shot.

The same day, I have already made a pound cake for my father (straight from the box) which took 40 minutes, and the cheesecake brownies which took another 35 minutes. My parents thought that there was something wrong with me to be constantly baking in the kitchen! I was on on roll that day and just had the inspiration to bake!  See, once you start baking, you can’t stop unless you run out of ingredients! Luckily for me, the things that I made had ingredients that every household should already have like sugar, baking powder, flour, eggs, and butter.   If I can make it, let me tell you, anyone can make it! That is how easy it is.

So, I consulted with my number one cookie recipe website, Cookie Madness, in hopes to find a good recipe for macadamia cookies.  Even though I’m not a fan of macadamia, I love it with white chocolate in cookies! The harmonious union between the two is just a heavenly match! It will be an injustice not to have it and hold it! Now there were a few recipes on the site and I decided to go with the following one:

White Chocolate Macadamia Cookies

White Chocolate Macadamia Cookies

Ingredients:

1 stick unsalted butter, soft
1/2 cup regular vegetable shortening (Crisco!)
3/4 cup granulated sugar
1/2 cup light brown sugar
1 large egg
2 teaspoons vanilla extract
3/4 teaspoon salt
1 teaspoon baking soda
1 3/4 cup all purpose flour
1/2 cup salted, dry roasted macadamia nuts, chopped (or get the Diamond brand because it’s already chopped)
8 oz [nestle] white chocolate morsels

Instructions

Preheat oven to 350 degrees.  Line a couple of cookie sheets with parchment paper.

1. Beat butter, shortening and both sugars with an electric mixer until creamy.
2. Add egg and vanilla and beat for about 30 seconds.
3. Scrape sides of bowl and beat in salt and baking soda.
4. Add flour and stir until it is almost mixed in, then stir in macadamia nuts and white chocolate.
5. Drop dough about 3 inches apart (these spread quite a bit) by tablespoonfuls onto cookie sheets.
6. Bake for 12-14 minute or until edges are golden brown.
7. Cool on cookie sheets for about 5 minutes, then transfer to wire racks.

Makes about 30 cookies.

I am not good at shaping my cookies, but one day I will get good at it.   Oh well, this is not bad for my first attempt! It tastes sweet, just the way I like it, and it reminds of cookie dough and Hershey’s Cookies’ n’ Cream!

I probably mentioned this one too many times, but I love taking pictures of food.  The cookies might not look good as I mentioned, but they’re delicious! The edge is a little crispy, center is soft and chewy,  and the cookie itself is thin.  I could not complain about this recipe and I cannot wait to make it again! Thank you Cookie Madness!

    Yes, Yes, Yes! These are my fav too. Way better than chocolate chip cookies imo.
