Paula Deen's Old Fashion Cupcakes w/Chocolate Cream Cheese Frosting

Easy, simple and your back-to-basics old fashioned cupcakes.  I am not one that possesses many skills in the art of baking, but luckily there are recipes that simplifies it so everyone can bake anything.   Making cupcakes seems pretty simple, but nowadays people jazz it up with all sorts of fancy decorative frosting which to me is admirable and way too challenging for me.  Fortunately, the people whom I love to bake for which includes my family and friends like it light and simple.   I think I can speak for most of the older Chinese adults because they cannot handle too much sweetness.  So I am pleased to show you the cupcakes which I baked and the chocolate frosting that I specifically made for my friend who loves chocolate!  This frosting is not a Paula Deen recipe and I probably understand why because it doesn’t contain a lot of butter! Haha, bad joke.

Paula Deen’s Old Fashion Cupcakes

Ingredients

  • 1 3/4 cups cake flour (not self-rising – I used Pillsbury Softasilk Cake Flour)
  • 1 1/4 cups unbleached all-purpose flour
  • 2 cups brown sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 2 sticks unsalted butter, cut into cubes
  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon of cinnamon

Directions

  1. Preheat oven to 325 degrees F.
  2. Line cupcake pans with paper liners (I used organic paper liners because of Jillian Michaels. Toxin-free? ) Set aside.
  3. Combine in a bowl both flours, sugar, baking powder and salt. Mix on low speed until combined for about 3 minutes. Add in cubed butter, mixing until just coated with flour.
  4. Add eggs 1 at a time until combined.
  5. Slowly add milk and vanilla to batter until completely mixed scraping down the bowl as you mix.
  6. Add the cinnamon and I added a few drops (3 drops or until batter is to the color of your choice) of yellow food coloring for myself because I like the color.
  7. Scoop batter into baking cups filling about 2/3 full.
  8. Bake until a cake tester inserted in the center comes out clean, 17 to 20 minutes.

Chocolate Cream Cheese

Ingredients

  • 1 8 oz package cream cheese at room temperature
  • 1/2 stick of butter at room temperature
  • 4 cup sifted confectioner sugar
  • 1/2 cup cocoa powder

Directions

  1. Mix cream cheese and butter until smooth and creamy.
  2. Mix in confectioner sugar one cup at a time.
  3. Mix in cocoa powder.

The reason why I used this recipe was because cream cheese was the only ingredient that I really had and I was curious to see how it would tastes like.

This chocolate frosting tastes amazing!  It was too sweet for my friend’s taste because she’s a dark chocolate lover but it passes my taste buds.  It was time consuming to make this frosting even though it looks so simple to make.  In the end, my countertop and stove was covered in cocoa powder and confectioner’s sugar but it was all worth it!

This cupcake can be a little heavy, as with most of Paula Deen’s recipe.  Perhaps I will try it with Angel food cake like my friend says.
