Happy Birthday with an Oreo Ice Cream Cake!

Dear Loyal Readers of Finechinagirl,

I simply must apologize for not updating the website at all!  I have been busy recently and have not had the chance to touch my computer.   Funny how time flies and flies and flies!  I have gone to a few restaurants which I will post sometime in the near future.  But for now I would like to share with you and oreo ice cream cake that I made for my brother’s birthday this past January 14th.

As a busy girl living in New York City, I just don’t have time to make ice cream, even though I have a nice ice cream maker.  So, I scoured the web trying to find a simple, and I stress verry simple ice cream cake recipe, which I found through video.about.com. Ingredients:

  • 1 package Oreo cookies
  • 1/4 cup melted butter
  • 1/2 gallon of Breyer’s Oreos Cookie Ice Cream
  • A can of Cool Whip Cream

Make sure you have a 9″ wide springform pan.  I don’t have the fancy pan in the about.com video, but it will do.  The belts on the side of the pan makes it easier for you, but if you’re ghetto and cheap like I am, you will have a tougher time without it.  Not too much tougher, just a little bit because it can get messy.

Instructions:

1. Put the ice cream in the refrigerator to soften for about 10 minutes.
2. Set aside about 12-15 oreo cookies for decorating the cake.  Then empty the rest of the oreos into a large ziploc bag and crush them into fine pieces.  Feel free to use the blender to make it coarse, or you can do what my mom did and take the rolling pin and slam the ziploc bag with the cookies.  I find that that was more effective that actually taking the rolling pin and roll it onto the cookies.  Plus it’s more fun too especially if you were in a bad mood like I was that day.
3. In a mixing bowl, combine the oreo crumbs with the melted butter.  Mix thoroughly or else the crust won’t stick like in my experience.  If the oreos don’t seem to be thoroughly mixed with butter, melted another 1/4 of butter and see if that will do the trick.
4. Pour the crust mixture onto your springform pan and spread it out evenly.  Then put it in the freezer for 10 minutes.
5. Take our your ice cream from the refrigerator and put it in a mixing bowl.  Take a spatula and stir the ice cream so it because nice and soft with a nice consistency.  Once the crust is done freezing, pour the ice cream in the springform pan and cover it with a sheet of aluminum foil.  Freeze this for 4 hours.

6. Once the 4 hours has passed, take it out of the freezer and run a knife along the sides of the cake so that you can easily remove the cake from the pan.  Now carefully take the oreo cookies which you have set aside and just gently twist the oreo sandwich into two pieces and stick it on the side of the cake.   The reason why I would set more oreo cookies aside is because I have the tendency to complete break the cookie into pieces, which will not make the cake pretty.
7.  Take the can of cool whip and completely coat the entire cake with it.  Top the cake with some oreo cookie crumbs and cover the cake once again with aluminum foil and return it to the freezer for another 4 hours.
8.  When the cake is completely frozen, put it in the refrigerator for 10 minutes so it softens and then serve.
9.  Lastly, decorate the cake to your liking!

My cake is  not perfect and it is my first time making it.  I’m not an artist, but the cake looks decent.  My brother loved the cake and definitely enjoyed the taste of the cake!  If I feel ambitious, one day I will make my own oreo ice cream, but until then this is a fast and great way to make an oreo ice cream cake!  Good luck if you make one and be sure to show me pictures of your version!

    Chiefy, this is one fancy cake, no doubt. I am sure it tasted so good. You should be a professional cook, hands down.

    When are you gonna make it for the pricing group. Think about that chiefette!

    Thank you chiefy! By the time I bring out the “fancy” ice cream cake to work, it will turn into mush! Pricing group is always welcome to come over to my house for dessert!
