Favorite Brand Name Recipes: Chunky Oatmeal Raisin Cookies
In another installment of the cake mix cookies series, today I will be featuring the Chunky Oatmeal Raisin cookies recipe that I got from my Cake Mix Cookie book published by Publications International, Ltd.
Chunky Oatmeal Raisin Cookies
Trust me, the cookie actually tastes better than it looks. I didn’t take better pictures because I was exhausted from baking at 11pm at night time.
Recipe:
Ingredients:
- 1 package (approximately 18oz) yellow cake mix
- 1 1/2 cup of oats
- 1/2 cup of all purpose flour
- 2 teaspoon of ground cinnamon
- 1 pinch of grounded cloves (I added this to the original recipe)
- 1/2 cup of packed brown sugar
- 2 eggs
- 1 teaspoon of vanilla extract
- 1 cup (2 sticks) of melted unsalted butter
- 1 cup of raisins
- 1 cup of walnuts pieces, toasted
Instructions:
1. Preheat oven to 375 degrees. Line cookie sheets with parchment paper.
2. Combine cake mix, oats, flour cinnamon and cloves in a large bowl until well blended. Beat brown sugar, eggs, and vanilla in a medium bowl until well blended. Add egg mixture and melted butter to dry ingredients; stir until combined. Fold in raisins and walnuts.
3. Drop tablespoonfuls (I use a cookie scooper) of dough 2 inches apart onto prepared cookie sheets. (Make sure to spray PAM cookie oil onto the sheets) Bake 14-16 minutes or until bottoms are golden brown. Remove to wire rack; cook completely.
Yield 4 dozen cookies.
To get the cookies to look a little flat, just take two fingers and press on top of the dough so it flattens a little. I made 3 dozen cookies with my cookie scoop, but I’m sure I could have made 4. I don’t like small cookies so these cookies worked out well for me. The cookies are soft like a cake, and chewy like how a cookie is supposed to be. The combination between raisins and oats are heaven to me. I only used 1/2 cup of walnuts because I’m not a big fan but I appreciate the texture in the cookie.
Anyways, good luck if you choose to use this recipe. It is so easy to make, but difficult to make it look nice!

Easy, simple and your back-to-basics old fashioned cupcakes. I am not one that possesses many skills in the art of baking, but luckily there are recipes that simplifies it so everyone can bake anything. Making cupcakes seems pretty simple, but nowadays people jazz it up with all sorts of fancy decorative frosting which to me is admirable and way too challenging for me. Fortunately, the people whom I love to bake for which includes my family and friends like it light and simple. I think I can speak for most of the older Chinese adults because they cannot handle too much sweetness. So I am pleased to show you the cupcakes which I baked and the chocolate frosting that I specifically made for my friend who loves chocolate! This frosting is not a Paula Deen recipe and I probably understand why because it doesn’t contain a lot of butter! Haha, bad joke.

Pakistani Peanut Pista Biscuits & Mango Drink
I have to confess, the Pakistani’s knows how to make great biscuit cookies! Among my favorites is the Peanut Pista Biscuits cookies shown below.

I can eat this whole package in one sitting, I swear! My friend has bought this for me to try since he knows how much I like to eat and try new things! I always try to post all my new and unique foodie experience to FCG.com and this is definitely worthy to post about.
Like most ethnic foods, you will have to journey to a local ethnic grocery store nearest you. I believe most Pakistani groceries are along Coney Island Avenue, Brooklyn, stretching from Church Avenue as far as Newkirk Avenue and beyond. In Queens, you can visit Jackson Heights and pick it up from there as well.
Delicious Peanut Pista Biscuit Cookies
This crunchy and flavorful biscuit/cookie has sprinkles of pistachios bits and the flavor of peanuts which is infused in the biscuit. If you’re a peanut and pistachio fan like I am, you will definitely enjoy this. When you take your first bite, the biscuit will make a crunch as it falls apart in your mouth. As you continue to chew through this, it feels almost creamy and buttery with a kick of peanut goodness with the crunch of pistachio goodness!
To complete this exciting snack experience, I will need a drink!
Regro Ka Tiger Mango Drink
For some of you that know me, I am a HUGE fan of mango. I love Mango Lassi, and this drink satisfies my mango lassi fix! This is a product of Pakistan and tastes great when refrigerated. It is sweet and somewhat thick, like a mango lassi, which is what I love. I can drink the whole six pack of this drink because I am addicted to it. Very delicious in my opinion and if you ever come across to this drink, pick it up and share it with your friends and family!

My coworker, Karen, last day of work will be tomorrow, Tuesday September 1st. Can you believe how many days that went by that I promise her banana bread? Too many. My goodness, so many promises that I made with her, one included going to a gun range to shoot off a load of steam there. But no matter how many disappointments that comes by her way, this chiefette, as we’re used to calling girls at work, will always smile ’til the end. She has the patience of a saint, heart of an angel, and ambition like a shooting star. She will always be one of my most favorite coworker/friend and I wish her the best as she transitions her new life in South Carolina. I will miss her so much, but I will be happy to know that the best new phase of her life will come up very soon.
In commemoration of her last day, well second to last day, I have decided to devote my Sunday to baking for Karen. I told her and many of my co-workers that I will actually do it because I will probably never get the chance to do so. And once I tell someone that I’m doing something, I make it my personal goal to make it happen! Karen once sent me this Emeril Lagassi recipe for banana bread, but I thought I would try something different; like a Paula Deen recipe because I love her so much. Anyone and everyone who knows me know that I am a huge rocking fan of Paula Deen. I absolutely love and adore her personality and most importantly her delicious kick-ass recipes! If I see Paula walking down on the streets, I’d personally give her one of the biggest hug and kiss and tell her how much I love her! Yes I would.
Now, you think Banana bread is banana bread? Well better guess again!
